The first perfumer we can name was a woman. She worked in Mesopotamia around 1200 BCE, and we know about her because somebody wrote it down in clay.
Her name was Tapputi. The tablets found at Assur call her Tapputi-Belatekallim, and the second part is a title rather than a surname: overseer of a palace. She worked with flowers, oils, calamus, balsam and myrrh, cut them with water and solvents, and then distilled and filtered the result over and over to get something clean that lasted. Distil, filter, repeat.
Three thousand two hundred years later we are doing a version of the same thing in Regina with a pipette, and the part we find hard to get over is that she was writing procedures down. Not recipes handed mouth to mouth. Procedures, with her name on them.
What the ancient world actually knew
Every culture with access to fat and flowers worked out that you could get scent out of one and into the other. Egypt had it. Greece and Rome had it, and had it loudly. The interesting part is not that people liked to smell nice, which is not a discovery, but the machinery.
The oldest surviving manual on the subject was written in ninth-century Baghdad by al-Kindi, and it is called the Book of the Chemistry of Perfume and Distillations. It runs to more than a hundred recipes and methods. A hundred formulas, written out, in the ninth century. Nothing in Europe comes close for another six hundred years.
You will read constantly that Avicenna invented steam distillation and used it to make rose water. That overstates it. Distillation was already in use, and what he did was improve the alembic, chiefly the cooling coil, so that steam condensed more efficiently. That is a real contribution and it does not need inflating. A story like this gets better each time it is retold, and the flattened version is usually the one that reaches you.
Our confidence here is moderate rather than high. The sources available to us on early Islamic distillation are mostly secondary and popular, and a specialist historian would sharpen this paragraph. We would rather tell you that than write a confident sentence we cannot fully stand behind.
Grasse smelled disgusting first
The town that became the centre of French perfumery got there through leather.
Grasse in the early Renaissance was a tanning town. It had sheep and it had spring water, which is what you need to treat hides, and tanning is one of the foulest processes anyone has ever done at scale. Then perfumed gloves became fashionable, and a town that already worked leather and already grew flowers was sitting on the answer. By 1614 the perfumed glove-makers of Grasse were recognised as a corporation under Louis XIII. Gloves went out of fashion. The scented oils turned out to be worth more than the leather, and by the 1700s the town had swapped trades entirely.
Then, in 1709, an Italian living in Cologne named Johann Maria Farina made a citrus water and named it after the city. Farina 1709 is still made by the same family. He described it in a letter to his brother the year before as smelling of "an Italian spring morning, of mountain daffodils and orange blossoms after the rain." Say what you like about perfume copywriting since. He was first and he was better at it than most of what has followed. Eau de cologne stopped being one product and became a category.
1868, and everything changes
Here is where we want to slow down, because this stretch of about forty years explains the entire modern market, including our own shelves, including whatever is on your dresser.
Until the late 1800s a perfumer could only use what could be grown, dug up, squeezed, or taken off an animal. That put a floor under the price of everything. If you wanted violet you needed violets, and violet extract was ruinous.
In 1868 the English chemist William Henry Perkin synthesised coumarin. It reached the market by 1876. Coumarin smells of hay, almond and warm tonka bean, and it was the first naturally occurring aromatic compound anyone had built from scratch. In 1874 Ferdinand Tiemann and Wilhelm Haarmann synthesised vanillin, and the same year Haarmann & Reimer was founded as the first company devoted to making synthetic ingredients for flavour and fragrance. An industry existed now, not a craft.
The economics are the part nobody tells you, so here are the numbers.
Heliotropin, which smells of almond and powdered flowers, cost 3,790 francs a kilo in 1876. By 1899 it cost 37.5 francs. The price divided by a hundred in twenty-three years.
Vanillin did the same thing more slowly: 938 francs a kilo in 1885, under 115 francs by 1900. Meanwhile natural vanilla sold at 350 francs a kilo in 1823 and 40 to 50 francs by 1909, because the synthetic dragged the natural price down with it.
Perfume stopped being something only the rich could smell of, and every argument you have ever heard about synthetics being cheap and cheating starts right there, with a price chart.
The materials arrive in a rush after that. Nitro musks in 1888, from Albert Baur, the first synthetic musks and the first fully man-made materials used in perfumery. Ionones in 1893, from Tiemann and Paul Krüger, who were trying to work out what made orris butter smell like that and found something simpler and cheaper on the way. Ionones smell of violets. Suddenly violet was affordable.
Then methyl anthranilate in 1898, aliphatic aldehydes from around 1903, hydroxycitronellal in 1905, and isobutyl quinoline from Darzens in 1908. Hold on to those last two, and see our materials guide for both in full. Hydroxycitronellal is how you make lily of the valley, a flower that yields nothing when you try to extract it, and it is what Roudnitska built Diorissimo on in 1956. Isobutyl quinoline is the tarry leather material that Germaine Cellier poured into Bandit in 1944 at around 1% and frightened everybody. A chemist made a molecule in 1908 and it sat around for thirty-six years waiting for someone with the nerve to use too much of it.
The first bottle that used any of it
Houbigant put out Fougère Royale in 1882, composed by Paul Parquet, and it is usually called the first fine fragrance to use a synthetic. The synthetic was coumarin. Parquet built lavender, oakmoss and coumarin into an accord that did not smell like any actual thing, and named it after ferns, which have no smell at all. He invented an abstraction. Every fougère since, and that includes a large share of the men's aisle, descends from it.
You will see the date given as 1884 in some places, including in discussion of the Osmothèque's reconstruction. We are printing 1882 and flagging the disagreement.
Seven years later, in 1889, Aimé Guerlain made Jicky. Jicky gets called the first modern perfume more than anything else does. It used synthetics alongside naturals and it stopped trying to be a picture of one flower.
One thing to know first: the Fougère Royale sold today was recomposed in 2010 by Rodrigo Flores-Roux, who toned down the coumarin because he found the original too powdery. You would be smelling his 2010 version, not the 1882 formula. Most fragrances that old have been reformulated the same way.
The couturiers take over
Perfume houses used to sell perfume. Then clothing designers noticed that a fragrance carries a name into a room where the clothes cannot go.
Paul Poiret founded Les Parfums de Rosine in 1911, named for his daughter, and put out more than thirty fragrances before 1929. He is routinely called the first couturier to do this, though that claim is argued over by people closer to the archives than we are. First or not, he was early and the model stuck. It is the model nearly every fragrance you can buy today still runs on.
In 1921 Chanel released No. 5, composed by Ernest Beaux, and it made aldehydes famous. The story everyone repeats is that Beaux or an assistant slipped and overdosed the aldehydes by accident. Every source that tells that story calls it a legend while telling it. Treat it as a story about the perfume rather than a fact about the perfume.
A note you are owed: we do not carry Chanel, and we never will. Chanel pursues decanters aggressively, and we do not touch them. That removes No. 5 and several other real landmarks from this guide, along with Ernest Beaux and the two Polges. Lanvin's Arpège, from 1927, made by André Fraysse and Paul Vacher together, carries the aldehydic floral lesson instead. We would rather tell you what is missing and why than quietly build a history with a hole in it.
The landmarks, in the order you can smell them
The 1940s are a strange, brilliant period, because the war made materials scarce and two of the century's best fragrances came out of the shortage. Edmond Roudnitska composed Rochas Femme in occupied Paris in 1943 with almost nothing available, leaning on a compounded base called Prunol for its plum, and Rochas launched it in 1944. The same year, Germaine Cellier made Bandit for Robert Piguet. Then Vent Vert for Balmain in 1947 and Fracas for Piguet in 1948. Leather, green and tuberose, three families more or less defined in four years by one woman. She gets a full profile in our guide to the perfumers, and she has earned it.
The current Vent Vert is not made anymore in Cellier's original form; what you can buy is the 2024 version by Calice Becker and Shyamala Maisondieu.
The 1950s and 60s go quieter and cleaner. Diorissimo in 1956 is Roudnitska again, building a flower that cannot be extracted. Guerlain Vétiver in 1959 is Jean-Paul Guerlain's first release, made at 22, and it was a reworking of a vetiver the house already had rather than a blank page. Eau Sauvage in 1966 is the one that moves the needle, because it was the first fragrance to use Hedione, a material that makes everything near it brighter.
Then the eighties get loud. Kouros, 1981, Pierre Bourdon. Animalic, soapy, enormous, and built for a decade that wanted to be noticed. Seven years later the same man made Cool Water, and the market turned on its heel. Fresh replaced heavy almost overnight.
The nineties are the most commercially consequential decade of the timeline. Olivier Cresp's Angel in 1992 invents the gourmand and makes sweet a legitimate direction. CK One in 1994 from Alberto Morillas makes unisex mainstream. Francis Kurkdjian's Le Male lands in 1995, and Morillas returns with Acqua di Gio in 1996. Four fragrances, four templates, and the clone market is still working through them thirty years later.
After that: Light Blue in 2001, Cresp again, the 2000s fresh in one bottle. Terre d'Hermès in 2006 from Jean-Claude Ellena, mineral and spare where everything around it was sweet. Creed Aventus in 2010, credited to Erwin Creed and Jean-Christophe Hérault together, and the reference point the modern clone market keeps coming back to. Then 2015 gives you two at once: Baccarat Rouge 540 from Kurkdjian, which started as 250 crystal bottles for Baccarat's anniversary before it was a perfume you could buy, and Dior Sauvage, which outsold nearly everything (we stock the 2018 Eau de Parfum, not the 2015 original).
What the shape of it tells you
Look at the timeline again and one pattern is clear. The gaps between the milestones get shorter and the milestones get less strange.
Between Fougère Royale and Jicky, seven years, and both invented something. In the last fifteen years this list has three entries, and two of them are refinements of ideas that already existed. That is what a mature industry looks like, and it is not a complaint. It is the reason the interesting question for a buyer in 2026 has moved from what is new to what is good.
The other thing is that almost every date here sits next to a material. Coumarin makes fougère possible, ionones make violet affordable, hydroxycitronellal makes lily of the valley exist, hedione makes the modern bright drydown, and calone makes the nineties smell like the sea. Perfumers get the credit, and they should, but they were all waiting on a chemist.
